Broccoli Stew with Oregano Seasoning! Friends, I made this dish for a diabetic patient food challenge in one of my foodie group. However I got busy and was not able to post there!

But I want to convey that its a super healthy choice for diabetic patients as well a diet food. Moreover its a simple cooking method.

Broccoli is known to be a hearty and tasty vegetable which is rich in dozens of nutrients. It is said to pack the most nutritional punch of any vegetable.  This contains antioxidants that can help the body in a variety of ways. Broccoli is deeply concentrated with vitamin C, making it great for immunity. It is also enriched with carotenoids lutein, zeaxanthin, beta-carotene and other power packed antioxidant.

You can either serve this as a curry or soup!

Ingredients

  • Broccoli petals - 250 grams
  • Olive Oil - 1 tbsp
  • Ginger chopped - 1/2 tbsp
  • Garlic chopped - 1 chopped (Add less or more as per your choice)
  • Onion chopped - 1 nos
  • Broccoli petals - 250 grams
  • Carrot sliced - 100 grams
  • Capsicum - 50 grams
  • Fresh Coconut Milk - 1/2 coconut grated with 180 ml of water
  • Arrow root - 1/2 tbsp (Optional)
  • Dried Oregano - 1 tbsp
  • Salt to taste

Method

Step 1

Heat a pan saute chopped garlic and ginger in a spoon of olive oil followed by one onion chopped lengthwise and 2 green chilly. No need to make onion golden brown. Let onion become translucent and little raw.

Step 2

Then add broccoli petals and carrot pieces. saute for 1 minute and add bell pepper (Capsicum I have used is of Yellow color to make the curry colorful).

Step 3

Add Salt for taste.

Step 4

Take fresh coconut milk from 1/2 coconut grated with 180 ml of water. Make thick coconut milk.

Step 5

Add this coconut milk to broccoli & mix well. Then just allow coconut to heat a little. Do not boil. Adjust salt.

Step 6

To make the gravy thick add 1/2 tablespoon arrowroot powder in 3 tbsp water and add to the gravy.

Step 7

Add dried oregano on top for seasoning. Enjoy!
