Ghee Rice with Malabar Chicken Curry & Youghurt

Ghee rice – നെയ്‌ ചോർ NeyChoru (Malayalam word) is a delicious Malabar special dish that can be served with spicy Malabar chicken curry or spicy kerala chicken curry with yoghurt salad – Kachambar (Malayalam word).

As always my version is very simple. Try it with same quantities specified below.

Ingredients

  • Rice (Jeerakasala Naychor Ari) - 1 glass
  • Water (To cook rice) - 2 glass
  • Cumin Seeds (NallaJeerakam) - 2 pinch
  • Onion - Chopped 1/4 cup
  • Cardamom (Ellakka) - 2 nos
  • Cinnamon (Patta or Karukapatta) - 1 inch stick made into 2 piece
  • Cloves (Grambu) - 2 nos
  • Bay leaves (Karuvaela) - 1 leaf
  • Carrot - Finely chopped 1 tbsp. (Optional)
  • Salt to taste
  • Vegetable Oil - 1 tbsp
  • Ghee - 1 tbsp
  • For Garnishing:-
  • Onion - 1/4 cup chopped into long pieces
  • Cashew nut - 6 nos (Optional)
  • Raisins (Unakka Munthiri) - 6 nos (Optional)

Method

Step 1

Wash rice and soak for 15 minutes. Drain and allow it to dry for half an hour.

Step 2

Mean while boil 2 glass water with 1/4 tbsp salt

Step 3

Heat vegetable Oil and ghee in a thick bottomed vessel.

Step 4

In this oil, first fry items required for garnishing one by one. The onion should be fried golden brown followed by raisins and then cashew nuts. keep the items for garnishing aside.

Step 5

To the same oil add ghee and chopped onion, carrot, cumin seeds (NallaJeerakam), cardamom (Ellakka), cinnamon (Patta or Karukapatta), cloves (Grambu) and bay leaves (Karuvaela) one by one. Fry these items for a minute.

Step 6

Add drained and dried rice to above mixture. Fry rice for 2 minutes.

Step 7

Reduce flame. To the rice add boiling water and mix everything well.

Step 8

Adjust salt and close the vessel with a tight lid. Allow to cook in lowest flame until all the water is evaporated and the rice is cooked well. In approximate 10 to 15 minutes the rice will be cooked and water will be evaporated.

Step 9

Stir well and keep Ghee rice vessel closed for 5 more minutes. Now tasty and yummy Malabar Ghee Rice is ready to serve.

Step 10

While serving garnish with golden fried onions, cashew nuts and raisins.

Step 11

Tip: If you are looking for an alternate rice recipe other than Biryani, Pulao or Fried Rice for a party or Eid, Ghee rice (NeyChoru) with spicy Malabar chicken curry or spicy kerala chicken curry with yoghurt salad (Kachambar) is a perfect option. Enjoy!
