Pudina rice is one of the healthy vegetarian food item. Mint or Pudina is a herb which is widely used for cooking. Adding pudina or mint makes this rice unique and flavorful. Serving this special dish will definitely  make the friends and other family members happy. If you are busy, you can make this food item easily within minutes.

Mint leaves can be used in tea, salads,chutney etc. There are many health benefits for mint leaves. Consuming mint with our food is good for the body.  It is a good source for the digestion, helps to regulate nausea and headache, resist asthma, regulates fatigue, decrease depression etc. It is also good for the health of skin and controls pimples.

Mint rice recipe | Healthy vegetarian recipe

Ingredients

  • Basmati Rice - 2 cups
  • Onion - 1 nos ( chopped )
  • Lemon juice - 1 tsp
  • Pudina leaves - 2 cups
  • Coriander leaves - 1/2 cup
  • Green chillies - 4 nos
  • Ginger - 1 piece
  • Garlic cloves - 2 nos
  • Vegetable oil - 4 tsp
  • Cinnamon stick - 2 pieces
  • Cloves - 2 nos
  • Cardamon - 2 nos
  • Bay Leaf - A small piece
  • Fennel seeds - 1/4 tsp
  • Salt to taste
  • Water - 4 cup

Method

Step 1

Wash and soak the Basmati rice in water for about 15 minutes. Drain the excess water from rice.

Step 2

Grind pudina, coriander leaves, green chillies, ginger and garlic to a fine paste. Keep aside.

Step 3

Heat vegetable oil in a pan then add cinnamon stick, cloves, cardamom, bay leaf and fennel seeds. Fry for 2 minutes. Add chopped onion and fry till it become transparent.

Step 4

Add grinded paste, salt and stir fry for 3 minutes. Add rice to this mixture and mix well.

Step 5

Add four cup of water and stir well using a spoon. Close the pan with a lid and cook for 15 minutes on a medium flame. After 15 minutes switch off the flame.

Step 6

When it is cooled, open the lid then add lemon juice and mix well.

Step 7

Tasty Pudina Rice is ready.

Step 8

Garnish with few fresh pudina leaves.
