Pal payasam is a classic and delicious Kerala dessert made with milk and rice. It is prepared on special occasions and festivals like Onam, Vishu etc. Pal Payasam is rich, creamy and tastes heavenly. The good thing is this payasam is so simple to prepare, even if it is a beginner can try this with confident.
Ambalapuzha paal payasam is very delicious and It can be served as warm or cold.

- Raw rice (Pachari) - 1/2 cup
- Milk - 6 cup
- Sugar - 2 cup
- Cardamom powder - 1/4 tsp
- Cashew nuts - 8 nos
- Raisins - 6 nos
- Ghee - 2 tsp
Wash the rice with water,drain and keep aside.
Boil 4 cups of milk in a pressure cooker. Once the milk comes to a boil add the washed rice and sugar.
Close the cooker with the weights on and cook in a very low flame for 20 minutes.
After 20 minutes switch off the flame. Once the steam has come out of the cooker open it.
Add the remaining milk and bring it to a boil.
Close the cooker again with weights and cook for another 10 minutes in low flame.
After 10 minutes switch off the flame and open the cooker. Add cardamom powder and mix well.
Heat a pan add ghee and fry the cashew nuts and raisins and decorate it to the payasam.
Tasty pal payasam ready to be served.
