Fresh Cream Pineapple Cake – Cake Recipe

Fresh cream and Pineapple combined to make a cake perfect for any time of day or night. It was layers of soft, moist white cake, filled with whipped cream and pineapple. It was not overly sweet and most of all the icing was delicious.

Here, i am sharing a Pineapple Cake recipe with you which is very delicious to eat. It is one of the most preferred cake option for special occasions. This cake recipe is one among the sweetest  desserts after having a heavy meal.

Ingredients

  • Eggs - 3
  • Maida - 1 cup
  • Sugar - 3/4 cup
  • Condensed milk - 1/2 cup
  • Baking powder - 1 1/2 tsp
  • Vanilla Essence - 1/2 tsp
  • Fresh cream - 500 gms
  • Icing sugar - 5 tbsp
  • Pineapple - 100 gm (cut in to small pieces)
  • Pineapple syrup - 5 tsp
  • Cherries - 10 nos

Method

Step 1

Sieve maida and add baking powder in it and mix with spoon.

Step 2

In two separate bowls, separate egg whites and yolks carefully without dripping yolks in the whites.

Step 3

First beat with a hand beater egg whites on high speed till soft peaks are formed. Add sugar and beat again for 10 minutes.

Step 4

In another bowl, beat yolks till it changes color to light yellow for 5 minutes. Add condensed milk and vanilla essence and water and beat again.

Step 5

In egg whites, add egg yolks mixture and fold gently with spoon in clockwise direction.

Step 6

Slowly add flour and again fold with spoon very soft in clockwise direction.

Step 7

Preheat oven at 180 C. Grease an 8 inch pan with butter and coat with flour and remove excess flour. Pour this mixture in prepared pan and smoothen the top with a spoon.

Step 8

Bake at 180 C for around 20-25 minutes till the cake leaves the sides of the pan. Cool the cake for 10 minutes.

Step 9

Take a bowl add the fresh cream and the icing sugar and mix well with a blender for 10 minutes. The cream is ready.

Step 10

Cut the cake into two equal layers with sharp knife. Take the first layer and pour pineapple syrup specially around the edges and apply prepared cream and arrange pineapple pieces on top.

Step 11

Pour syrup on the other piece of the cake and apply cream on top and all sides and cover the cake completely and level with a spatula.

Step 12

Decorate with cherries, pineapple pieces. Cover and refrigerate for 4 hours and serve chilled.

Step 13

The yummy fresh cream pineapple cake is ready to be served.
