Pork Varattiyathu is a spicy dish with pork well-seasoned with spices and then dry roasted in coconut oil. It is one of my father’s speciality dish. He is from Angamaly, a municipality in Ernakulam district in the state of Kerala, India where Pork roast/ pork varattiyathu is one of the popular dish.

I had it for the first time when my mother prepared it for me during my post delivery confinement period. I never felt of having this dish before, though my sister who is a fan of Pork roast, always asked me to taste it. But when I tasted it for the first time, I felt like I should have had this before.  It is so hot and spicy.

Pork Varattiyathu serves best with rice, appam, puttu, chappati or any other bread. This can be a good starter and also a good combination with drinks ;-).

Ingredients

  • Pork - 500 gm with less fat (cut into pieces)
  • Turmeric powder - 1/2 tspn
  • Coconut pieces - 1/4 cup
  • Water
  • Salt
  • Coconut Oil - 2 tbspn
  • Small Onion - 10 - 12 nos sliced thinly
  • Ginger Garlic Paste - 2 tbspn
  • Green Chilly - 3 slit
  • Curry leaves - 2 sprigs
  • Coriander leaves - 1 sprig
  • Pepper powder - 1/2 tspn
  • Cinnamon - 1 small piece
  • Cloves -3 nos
  • Fennel seeds/ sweet cumin - 1/4 tspn
  • Meat Masala - 1 tspn (I used Nirapara meat masala powder)

Method

Step 1

Pressure cook the pork pieces with turmeric powder, salt and coconut pieces along with enough water. Cook till for 2 whistles.

Step 2

When the steam has escaped, open the pressure cooker. Check if the pork pieces are cooked well.

Step 3

Now heat oil in a pan. Add small onions and saute till it turns golden brown.

Step 4

Then add ginger garlic paste, green chilly, curry leaves and coriander leaves one by one and saute well.

Step 5

Now add pepper powder, cinnamon, cloves, fennel seeds/ sweet cumin and meat masala. Sprinkle some water and fry till the aroma comes out.

Step 6

Add the cooked pork. Add salt if required. Fry for 5 to 10 minutes till it is brown in color and the oil separates. Spicy delicious pork varattiyathu is ready to serve.
