Ramdan Special Nombu Kanji Recipe | നോമ്പ് കഞ്ഞി

Ramdan Special Nombu Kanji Recipe / നോമ്പ് കഞ്ഞി is a healthy and tasty porridge recipe, which is served during iftar or for the dinner there after. It is very delicious and nutritious dish and gives a relief for the tiredness during fasting.

Ramdan Special Nombu Kanji Recipe – നോമ്പ് കഞ്ഞി – Healthy Recipe

The ingredients of nombu kanji may differ from place to place, but tastes delicious. Here I am using raw rice (പച്ചരി, pachari) and Moong dal (ചെറുപയർ പരിപ്പ്, cherupayar parippu). Also adding spices for nice aroma and flavor.

Ingredients

  • Raw rice / Pachari - 1/2 cup
  • Moong dal / cherupayar parippu - 2 tbsp
  • Carrot - 1 no (chopped)
  • Onion - 1 no (chopped)
  • Tomato - 1 no (chopped)
  • Ginger garlic paste - 1/4 tsp
  • Red chilly powder - 1/4 tsp
  • Garam masala powder - 1/4 tsp
  • Turmeric powder - a pinch
  • Thick coconut milk - 1 cup
  • Water - 4 cups
  • Mint Leaves - 1 tbsp (chopped)
  • Coriander leaves - 1 tbsp (chopped)
  • For tempering :- Sunflower oil - 2 tsp
  • Cloves - 2 nos
  • Cinnamon - 1/2 inch piece
  • Cardamom - 1 whole
  • Salt to taste

Method

Step 1

Grind raw rice and moong dal together to a coarse mixture and set aside.

Step 2

Heat oil in a pressure cooker. Add sun flower oil, cloves, cinnamon, cardamom and saute well. Add ginger garlic paste and onions. Fry till onions turn transparent.

Step 3

Then add tomato, carrot, mint leaves, turmeric powder, red chilly powder, garam masala powder and salt. Saute well. Then add raw rice and moong dal mixture.

Step 4

Add water and pressure cook for 4 whistles or until mushy. Once pressure releases, open and mash it well.

Step 5

Heat it again and add a little more water, if it is too thick. Then add coconut milk and mix well. Garnish with coriander leaves and switch off.

Step 6

Switch off the flame and garnish with coriander leaves.

Step 7

Tasty Nombu Kanji is ready.
