Rice Chicken Soup with Tahini Recipe – Healhty Soup Recipe

Rice chicken soup which I have made is a similar version of  Congee Soup also called as Jook in china. Rice Congee Soup (Jook) is slightly salty, and thick like porridge. Jook is a popular Chinese breakfast.

Rice chicken soup with Tahini Recipe – Healhty Soup Recipe

This soup can be given to kids when they are sick as the soup is filled with proteins and carbohydrates. Ginger and garlic will cure the digestion problem. Moreover, kids will love the soup as the soup is of chicken flavour. This soup can be used as a complete meal too. This is a great healthy dish when the weather is cold.

The chinese does not add Tahini. This is a twist from my end considering the nutritional value of sesame seeds and olive oil in the soup. Neither roasted or raw sesame seeds have any cholesterol. while they are rich  source of calcium, phosphorus, magnesium, iron, zinc, molybdenum, vitamin B1, selenium and dietary fiber.

Ingredients

  • Chicken - 100 gms (4 chicken pieces with bones)
  • Garlic Cloves - 4 pieces
  • Ginger - 1 /2 inch piece grated
  • Black peppercorns - 1/2 tbsp (crushed, take more if you want more spicy)
  • Basmati Rice - 180 gms
  • Water - 1 litre
  • Salt for taste
  • Coriander leaves
  • Sesame seeds - 2 tbsp
  • Olive oil - 4 tbsp

Method

Step 1

Firstly, boil 12 glass of water with garlic cloves, grated ginger, crushed black peppercorns, cleaned chicken pieces and salt. Let it boil on low flame for half an hour so that the chicken is cooked well and the water gets evaporated to 10 glasses.

Step 2

Meanwhile the chicken is getting cooked, you can prepare tahini. To make tahini firstly roast sesame seeds. Allow roasted sesame seeds to cool and then grind these sesame seeds with olive oil in a food processor to make a loose paste. Add more oil if required. This paste is call Tahini.

Step 3

Once the chicken is cooked and the water evaporates to 10 glasses, add washed rice to above boiling chicken stock mixture. Let the rice cook in chicken stock mixture on low flame for half an hour.

Step 4

Once the rice is cooked increase the flame and let the excess water evaporate until the soup gets your desired consistency. I like thick soup!

Step 5

Once the soup becomes thick remove chicken pieces from the soup and keep it aside for garnishing.

Step 6

Then mix half of the freshly prepared tahini paste to boiling rice chicken soup. Adjust salt.

Step 7

Switch off the flame and serve hot after garnishing with shredded chicken pieces, some tahini and coriander leaves.
