Tomato rice is a delicious food item that can be easily prepare at home. This rice recipe is a variety food item and a good lunch for the children. By serving this special vegetarian dish on special occasion, definitely surprise the guests, friends and other relatives.

Tomato rice is a healthy food. Tomatoes are juicy, sweet, and delicious. It is high in antioxidants and contains Vitamins, potassium etc. It helps to improve vision, a good source to fight against cancer, maintain blood health, reduce the risk of heart diseases and also good for digestion.

Ingredients

  • Basmati rice - 1 cup
  • Onion - 1 nos ( finely sliced )
  • Green chillies - 3 nos ( chopped )
  • Ginger garlic paste - 1 tsp
  • Tomatoes - 3 nos ( chopped )
  • Cloves - 4 nos
  • Cinnamon stick - 1 piece
  • Cardamoms - 2 nos
  • Red chilli powder - 1 tsp
  • Cumin Powder - pinch
  • Water - 2 cup
  • Vegetable oil - 3 tbsp
  • Coriander leaves - 2 strig
  • Mint leaves - 5 nos
  • Curry leaves - 1 strig
  • Salt to taste

Method

Step 1

Wash and soak the raw rice in water for 5 minutes and drain the excess water.

Step 2

Heat oil in a vessel or pressure cooker and add the curry leaves, sliced onions, green chillies, cloves, cinnamon and cardamoms then stir fry for 5 minutes.

Step 3

Add ginger garlic paste and saute for 3 minutes. Add chopped tomatoes, mint leaves, coriander leaves, salt, red chilly powder, cumin powder and cook for 6 minutes.

Step 4

Reduce the heat then add the basmati rice and mix well.

Step 5

Add 2 cups of water and allow it to boil. Reduce the flame and cook till the rice is well cooked. If you wish to cook the rice using a pressure cooker, close the lid and cook for 3 whistles. Switch off the flame.

Step 6

Tasty Tomato Rice is ready.

Step 7

Pour the tomato rice into a serving bowl. Garnish with fresh coriander leaves.
