Green Soup with Broccoli, Spinach and Beans – Diet Soup Recipes
Green Soup is healthy, no doubt. Hear we are using green vegetables like broccoli, spinach and beans. In addition we are using ginger, garlic, shallots, green pepper corns and corn flour for thickening the soup. This is an eggless soup.
The soup is loaded with nutrition. Broccoli is a good source of vitamin B1, magnesium, omega-3 fatty acids, protein, zinc, calcium, iron, niacin and selenium. Spinach is low in fat and even lower in cholesterol. Eating beans regularly may decrease the risk of diabetes, heart disease, colorectal cancer, and helps with weight management.
Adding green to your diet can help increase the vegetable intake. Hence good for those who are dieting.

- Ginger paste - 1/4 tbsp
- Garlic paste - 1/4 tnsp
- Shallots - 1/4 cup finely chopped
- Broccoli - 1 cup finely chopped
- Beans - 1/2 cup finely chopped
- Spinach - 1 cup
- Crushed Green Pepper - 1/4 tbsp or as per taste
- Oil - 1/4 tbsp
- Vegetable stock - 1 cup
- Water - 4 cup
- Salt - as per taste
- To thicken the soup:
Corn flour - 2 tbsp
- water - 1/4 cup
- For garnishing:
Lime juice - 1 tbsp
- Spring onion (Scallion) - 1/2 cup chopped
In a pan, stir fry the ginger, garlic, shallots and crushed green Pepper in 1/4 tbsp oil for about 2 minutes. Add all the broccoli, beans and spinach to this. Continue to stir-fry for 1 more minutes. Add water and vegetable stock to the vegetable mixture and mix well. Add salt for taste.
Allow to boil for 10 minutes on medium flame or until the vegetables gets cooked well.
For thickening the soup, add corn flour dissolved in little water.
Garnish with Lime juice and Spring onion (Scallion) and serve hot...
