Kerala rice in pressure cooker | Parboiled rice in pressure cooker –  Kerala choru

Parboiled rice is extremely healthy due to its bran content. If cooked in a pot it will take approximately 45 minutes. Here is an easy method to cook Kerala rice with in 25 minutes in a pressure cooker.

This rice is A.K.A Matta rice or kuthari (കുത്തരി ). It is a popular food – Choru – item in Kerala and Sri Lanka.

Kerala rice is used to make idli’s, appams and snacks like murukku etc.

Ingredients

  • Rice - 1 cup
  • Water - 5 cup
  • Salt (optional)

Method

Step 1

Wash the rice 3 times and put into a pressure cooker.

Step 2

Add 5 cup of water and close the cooker lid.

Step 3

Once the steam starts from the pressure cooker, put the cooker weight.

Step 4

Allow the cooker to whistle for 2 times.

Step 5

Switch of the flame and keep the cooker close for 10 more minutes so that the rice is cooked and the cooker is cooled and all extra steam is gone.

Step 6

Open the lid after 10 minutes and drain water using a filter pot.

Step 7

If you feel stickiness on rice then pour some fresh water on rice. This will drain the extra starch on rice.

Step 8

Now your hot boiled (parboiled) matta rice is ready to serve.
