Dedicating the Cabbage Carrot Coconut Stir Fry to all vegetarian food lovers. This is a simple, easy and healthy recipe which can be eaten with steamed rice, roti or bread.
This highly nutritious stir fry requires less cooking time and less ingredients. This vegetarian dish is too good for your family and it is really an attracting dish for kids as it is very colorful one. Try at home and enjoy!
- 1 cup chopped carrots
- 1 cup chopped cabbage
- 1 big onion finely chopped
- 3 green chilli chopped
- 10 curry leaves
- 1/4 cup fresh grated coconut
- 1/4 tbsp mustard seeds
- 2 tbsp coconut oil
- Salt to taste
Heat oil in a thick bottomed pan and splutter mustard seeds. Then add onion to this.
Once the onion become translucent, add chopped carrot, cabbage, green chilli and curry leaves. Stir fry for 5 to 7 minutes until vegetables are cooked.
Then sprinkle freshly grated coconut and mix well. Add salt to taste. Stir fry for 2 more minutes.
Your tasty and healthy Cabbage Carrot Coconut Stir Fry is ready to serve.
