Chicken spring rolls recipe ( malabar style ) is a perfect snack for Iftar. The pan cakes are filled with meat masalas and then dipped in egg and then coated in breadcrumbs to give a very crispy and crunchy wrap and delicately spiced filling.
This is one of the usual snacks made during Ramadan and is easy if you have the filling made ahead.ย It isย stuffed with shredded chicken and fried to make an appetizing starter or snack. Try this crunchy snack at home.

Ingredients
- For chicken filling :- Boneless chicken - 250 gm
- Red chilly powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Pepper powder - 1/4 tsp
- Onion - 1 no ( chopped )
- Ginger garlic paste - 1/2 tsp
- Green chillies - 3 nos ( chopped )
- Garam masala - 1/4 tsp
- Coriander leaves - 2 tbsp ( chopped )
- For pan cake: - Maida / All purpose flour - 250 gm ( 2 cups )
- Cornflour - 2 tsp
- Egg - 2 nos
- Bread crumbs - 200 gm
- Vegetable oil - 200 ml
- Water - 200 ml
- Salt to taste
Method
Step 1
Take a pressure cooker and boil the chicken along with 1/2 teaspoon chilly powder, 1/4 teaspoon turmeric powder, 50 ml of water and salt. Cook for 2 whistle.
Step 2
Once the chicken is done, switch off the flame and let it cool. Shred the chicken and keep aside.
Step 3
Heat 3 tbsp of oil in a frying pan and add chopped onion into it and saute well until onion become light brown.
Step 4
Then add ginger garlic paste and chopped green chilly into it. Saute well until raw smell goes. Then add pepper powder, red chilly powder, coriander powder and turmeric powder to it.
Step 5
Saute for a minute or until the raw smell goes. Then add boiled and shredded chicken into it and saute until the chicken become dry and well mixed with the onion masala.
Step 6
Add garam masala, coriander leaves, salt and mix well. Switch off the flame and keep masala aside. The filling is ready.
Step 7
Add all purpose flour, 1 egg and salt in a bowl. Whisk it well and make a smooth batter.
Step 8
Heat a non stick dosa pan and pour a ladle full of batter and make thin pancakes. Once it starts to cook remove to a plate. Repeat the same with the rest of the batter.
Step 9
Place each pancake on a plate and put 2 tbsp of filling towards the side, and roll it tightly foldling the sides in half way through. Repeat same with the rest of the pancakes.
Step 10
Dip each roll in beaten eggs and roll in breadcrumbs.
Step 11
Heat vegetable oil in a pan and fry the chicken rolls till both the sides turn golden in colour. Transfer it to a paper towel.
Step 12
Tasty Chicken Spring Rolls is ready.
Step 13
Serve hot with tomato ketchup.
