In South India, Sambar has been cooked in different ways and recipes varies from region to region. A tradional Kerala sambar takes a longer time and involves a lot ofย processesย and that is how my Grandmother used to make. Sambar was one of her specailtiy dish and it tasted heavenly. But nowadays most of the people prefer to make it quickly. Here is an Instant and easyย way to make Sambar using Sambar powder.

Ingredients

  • Mixed Vegetables (any vegetables you have) - 1/2 kg (Drumstick,Potato,Carrot,Raw Banana,Tomato,Brinjal,Ladies finger, Ash gourd,Pumpkin,Cucumber..)
  • Dal/Yellow Pigeon Peas - 1 Cup
  • Sambar Powder - 4 tbspn
  • Turmeric powder โ€“ ยฝ tsp
  • Green Chilly - 5 nos (splitted)
  • Tamarind Water - 1/2 small lemon sized ball
  • Salt to taste
  • For seasoning
  • Oil as required
  • Mustard seeds โ€“ a few
  • Curry leaves โ€“ a few
  • Red chilies โ€“ 3
  • Fenugreek seeds โ€“ 1/4 tsp

Method

Step 1

Pressure cook dal adding enough water,salt,turmeric powder,sambar powder and green chillies.If you are adding vegetables like Raw banana,Potato or Elephant Yam or Carrot, then add it along with Dal. Note : Cooking time for these vegetables is more when compared to other vegetables.

Step 2

After two whistles, switch off the flame, when the steam goes off, open the lid and add all the other vegetables and salt if required. Mix everything and allow it to boil for 10 minutes. Don't put the weight and also no need to tilt the lid into the cooker. Just place the lid on top. Once the vegetables are cooked switch off the flame.

Step 3

For seasoning add oil to a pan, splutter mustard seeds, then add fenugreek seeds,red chillies and curry leaves. Add this to the curry.

Step 4

Garnish with curry/coriander leaves. Sever hot with rice.
