I had a mood to make a healthy English breakfast, but had to prepare it in less time. Checked the fridge and saw that there are many vegetables, cheese and egg available. So thought of making egg bake with loaded vegetables & baked bread on stove top. Somehow for me, cooking on stove top is faster.
Egg bake is a simple and very very easy recipe. Its loaded with full of nutrition and is a very healthy breakfast.

Ingredients
- For roasting vegetables:
Olive oil - 1 tbsp - Onion - 1 small (chopped)
- Tomato - 1 small (chopped)
- Spinach - 1 cup chopped
- Beans - 1 cup chopped
- Carrot - 1 cup chopped
- Broccoli - 1 cup chopped
- Green chilli - 2 nos chopped
- Salt to taste
- For making batter to bake:
All purpose flour - 1 1/2 cup - Egg - 1
- Water - as required to make a very thick batter
- Salt to taste
- To bake:
Butter - As required to lightly coat the pan
Method
Step 1
Firstly, roast vegetables. For that take a pan, heat the pan and add olive oil. Add vegetables one by one, stir fry and mix all vegetables together. Keep aside.
Step 2
Secondly make the batter for baking by mixing all purpose flour, egg, water and salt to taste.
Step 3
Take a flat thick bottomed pan and rub the pan with a light layer of butter.
Step 4
Spread vegetables evenly on the pan.
Step 5
Then pour the thick batter on top of vegetables and spread all over top. (Do not switch on the flame at this time). The batter will ooze between the vegetables, which will set all vegetables once baked.
Step 6
Then switch on flame and keep the pan on lowest flame. Cover the pan with a tight lid.
Step 7
Allow to cook on lowest flame. After 10 minutes check and flip the egg bake to cook the other-side.
Step 8
How to flip the bake item? Hold the handle of pan. Cover the pan with a plate and flip the pan. Then slide the uncooked side to the pan.
Step 9
Cook on slowest flame for another 5 to 10 minutes.
Step 10
Switch off flame and allow to cool a little. Meanwhile bake bread on stove top by spreading some butter. Make a boat cucumber salad which will give a fresh flavor to breakfast.
