As we know that in India, baking is not that common and many households do not have an oven, but that should not deter one from baking cakes. Don’t have an oven, don’t worry, you can still bake cakes in this Christmas at home with cooker and surprise your family. Cakes are always a problem for the vegetarians. The common question arises in the mind of majority vegetarians about cake is that whether they can eat or not. Some of them do not eat cakes made with eggs. But this recipe will surely solve this problem as it is eggless. Enjoy this simple cake made in a pressure cooker.

Ingredients

  • Plain flour ( maida ) - 1 cup
  • Powdered sugar - 1 cup
  • Baking soda - 1 tsp
  • Baking powder - 1 tsp
  • Milk - 1/2 cup
  • Condensed milk - 1/2 cup
  • Cashew nuts - 10 nos
  • Raisions - 10 nos
  • Butter - 1/2 cup
  • Vanilla essence - 1/4 tsp

Method

Step 1

Sieve maida, baking powder and baking soda together in to a medium bowl.

Step 2

Take another bowl add sugar, butter and mix well with a spoon. Then add condensed milk and vanilla essence, milk and mix well.

Step 3

Now add the maida mix into this batter. Mix well with a spoon until smooth consistency.

Step 4

Take a big pressure cooker. Remove the ring and weight from the lid. Add one cup of salt into the pressure cooker and heat it in a high flame for 3 minutes. No need to use water.

Step 5

Take a thick aluminium tin or a baking tin grease this with some butter. Pour the batter into the greased tin. To remove the excessive air bubbles hit the pan very gently on the counter top.

Step 6

Put the tin inside the cooker. Close the cooker with the lid and bake the cake for 30 to 35 minutes in a low flame. Do not open the cooker for first 25 minutes.

Step 7

After 35 minutes turn off the heat and remove the lid.

Step 8

Remove the cake tin out of the cooker. The delicious eggless sponge cake is ready.

Step 9

The yummy cake is ready to be severed.
