Elanchi – Stuffed Pancake

Elanchi / Coconut Stuffed Crepes is a tasty, quick and easy to make evening snack with an Indian twist.

Elanchi / Crepes are a form of pancakes, but they are usually thin and mainly prepared with eggs and flour. Crepes can be stuffed with a sweet or savory filling. Hopefully you will love these simple Coconut Stuffed Crepes.

Ingredients

  • All purpose flour (maida) - 1 cup
  • Egg - 1
  • Water -1cup
  • Grated Coconut - 1½ cup
  • Sugar - 3 tbsp
  • Cardamom Powder - ¼ tsp
  • Turmeric powder – one pinch
  • Fried cashew nuts - 10 nos
  • Fried raisins - 10 nos
  • Salt to taste

Method

Step 1

Heat a pan and add sugar and water to make a syrup. Add coconut and keep it in medium heat. When it becomes thick remove from fire. Add fried cashews, raisins, cardamom powder and mix well. The filling is ready.

Step 2

Break the egg into a bowl and beat it well. Add the flour, turmeric powder, salt and mix it well.

Step 3

Add enough water and prepare a smooth batter. The batter should be thinner than the dosa batter.

Step 4

Heat a non stick frying pan and pour a spoonful of batter in the centre, spread with the back of the spoon to a thin round. Keep on medium flame.

Step 5

When it is cooked on one side, place a spoon of coconut filling on one end of the pancake and roll it.

Step 6

Tasty elanchi or pancake is ready. Enjoy!
