Green gram, also known as the mung bean, is a small round bean similar in shape to the field pea. Mung beans originated in India and were cultivated throughout Asia. The ancient Chinese used mung beans for culinary and medicinal purposes such as dispelling heat and detoxifying the body. Today mung beans are still being used for culinary and health purposes due to the beans’ high nutritional content and value.
Mung beans contain approximately 3.16 g of protein per cup.These beans are low in calories and rich in fiber. Green gram also contains folic acid, fiber, magnesium and vitamin B-6. Therefore it also helps to keep the heart well.The soluble fiber helps to reduce the blood cholesterol and blood sugar levels.
Ingredients
- Green gram - 1 cup
- Green Chilly - 2 nos (chopped)
- Curry leaves - 1 string
- Salt to taste
- Oil - 2 cup (for frying)
Method
Step 1
Soak green gram in water for about 2 hours. Drain and dry with a towel. Chop the green chilly.
Step 2
Heat oil for deep frying in a heavy bottomed pan. To check the oil, drop a green gram and if it comes up quick then your oil is ready for frying. Keep it on low-medium flame while frying otherwise green gram will change its colour to dark brown and absorb lot of oil.
Step 3
When the oil is hot enough add the green gram, green chilly & curry leaves. Fry these for 4 minutes. Remove from the oil once they turn golden brown and crispy.
Step 4
Drain the green gram in tissue paper to absorb oil. Let it cool for sometime. Sprinkle salt. Mix well everything. Crispy Green Gram Fry is ready. You can store it in an airtight container.
