Garlic is one of the most valuable and versatile Spice on the planet. Garlic belongs to the Allium family of vegetable which also includes onion, shallots, and leeks. Garlic is also alleged to help regulate blood sugar level.

Garlic pickle is a very tasty pickle and it is easy to make. It is really spicy and hot.

Ingredients

  • Garlic cloves peeled - 1/2 cup
  • Kashmiri chilli powder - 2 tsp
  • Turmeric powder - 1/4 tsp
  • Mustard seed - 1/4 tsp
  • Cumin seed - 1/4 tsp
  • Fenugreek seed - 1/4 tsp
  • Salt to taste
  • Sugar - 1/4 tsp
  • White vinegar - 2 tsp
  • Gingelly oil (sesame seed) - 3 tsp
  • Hing (asafoetida) powder - 1/4 tsp
  • Curry leaves - 2 string
  • Water - 1 cup

Method

Step 1

Clean and wash garlic with water.

Step 2

Heat a pan add garlic, turmeric powder, salt, sugar and water. Cook for 4 minutes.

Step 3

Take a pan add 1 tsp gingelly oil and add mustard seed, fenugreek seed, cumin seed and fry for 2 minutes. Then grind it to a fine smooth paste using a blender.

Step 4

Heat the remaining oil in a pan and add curry leaves, grinded paste, Kashmiri chilly powder, cooked garlic and hing powder. Cook for 3 minutes.

Step 5

Finally add white vinegar and mix well. Spicy hot garlic pickle is ready to serve.
