Oothappam – Uttapam Recipe

Oothappam or Uttapam or Uthappa, literally means ‘poured appam’ in Tamil. Thisย is a dosa-like dish prepared by cooking ingredients in a batter. Unlike dosa, which is crisp and crepe-like, uttapam is a thick pancake, with toppings cooked right into the batter. Itย is a south Indian dish made with rice and urud dal.

Thisย is traditionally made with toppings such as tomatoes, onion, chillies, capsicum and cabbage mix; other common choices are coconut or mixed vegetables. It is often eaten with sambarย or chutney.

Ingredients

  • Dosa batter โ€“ 2 cups
  • Tomato โ€“ 1
  • Green Chilli โ€“ 3 nos
  • Onion โ€“ 2 nos
  • Salt โ€“ a pinch
  • Ghee - 2 tbsp
  • To make dosa batter:- Idli rice - 3 cups
  • Whole white urad dal - 1 1/2 cup
  • Fenugreek seeds - 1/2 tsp
  • Salt - As needed
  • Water - 2 to 3 cups

Method

Step 1

Wash idli rice and urad dal 5 times in water. Soak idli rice and urad dal with fenugreek seeds separately for 5-6 hours. Use large jar to grind batter. In jar add soaked dal and fenugreek seeds add 1/2 cup of water and grind in high speed for a minute then add 1/4-1/2 cup of water again and grind until it's smooth. Transfer batter to a large container.

Step 2

Now in the same jar add half of rice, normally grind rice in 2 batches, add 1/2-3/4 cup of water and grind for 2-3 minutes in high speed. Transfer batter to the same container in which we already transferd urad dal batter. Mix gently to combine everything together, using hand is best option. Cover and leave it to ferment for over night or 8 hours.

Step 3

Chop the onion, tomatoes and green chillies finely. Take a bowl mix chopped tomatoes, chopped onions, salt and chopped green chilly.

Step 4

Heat a pan and grease it with ghee. Pour a ladle of batter and gently spread it. Sprinkle the mixed vegetables all over on top. Drizzle ghee around the sides and cook on low flame.

Step 5

When cooked flip it over and cook on the other side too. When done remove on a plate.

Step 6

Serve hot Oothappam with coconut chutney or sambar. Enjoy!!!
