Palada Payasam is served usually at the end of Kerala Sadhya along with pappadam and banana. Palada is made using ‘Ada’ which is made using ground rice.
Palada Payasam is delicious and tasty sweet especially served during special ocassions like birthdays, Onam Sadya, Vishu,..etc.

Ingredients
- Palada - 200 grams
- Milk - 2 Litres
- Sugar- 1/2 Cup
- Water- 3 Cups
- Ghee - 1 tsp
- Cashew nuts - 5 nos
- Raisins - 5 nos
- Cardamon powder- 1/2 tsp
- Condensed milk- 1 cup
Method
Step 1
Boil 2 cups of water in a big vessel. To this, add Ada and keep it aside for 10 minutes. Switch off the flame and let it cool for some time.
Step 2
Drain the water and wash the Ada well in plain water.
Step 3
Mix 1 cup of water and 1 liter of milk and add the cleaned Ada to this and cook well.
Step 4
In a pan boil 1 liter of milk.
Step 5
Once the Ada is cooked well, add it to the boiling milk and keep on stirring ( ഇളക്കുക ). Allow the milk to get reduced and creamy and the Ada to become soft.
Step 6
Add condensed milk and sugar. Let the payasam boil well again for about 10 minutes.
Step 7
Finally add cardamon powder and switch off the flame.
Step 8
Heat a pan and add ghee and roast the cashew nuts and raisins and garnish on the top.
Step 9
Tasty Palada payasam is ready.
