Palappam or Kerala Appam is one of the most popular traditional Christian Kerala breakfast. Palappam is a type of South Indian pancake made with fermented rice batter and coconut milk. These white pancakes have crisp and lacy edges with fluffy centre.
Palappam is usually served with a range of side dishes like vegetable stew or chicken stew, sweetened coconut milk, Kerala egg curry, egg roast, korma, kadala curry etc.

Ingredients
- Raw rice (white) – 3 cups
- Cooked rice – 2 cups
- Grated coconut – 1 cup
- Sugar – 3 tbsp
- Yeast – 1 tsp
- Salt to taste
- Thick coconut milk - 1 cup
- Luke Warm Water - 1/4 cup
Method
Step 1
Soak rice in water for a minimum of 5 hours.
Step 2
Grind raw rice, cooked rice and grated coconut to a smooth paste with thick coconut milk. In the luke warm water add yeast and dissolve it well. Add this yeast, salt and sugar to the batter and mix well.
Step 3
Cover it and keep aside for fermentation for 6 hours.
Step 4
Heat a non-stick pan (appachatty) and pour 1 ladle full of batter, lift the pan and rotate it to spread the batter, cover and cook over medium heat .
Step 5
Repeat the process for the rest of the batter.
Step 6
Serve hot Palappam with chicken stew or any stew or curry of your choice. Enjoy!!!
