different Peas or beans are cooked at our homes.
Red cow peas / red cow beans (Vanpayar) are rich in fiber, proteins, vitamins and minerals. I have read in organicfacts.net – Nutritional Value of Cowpea and Pigeon Pea Cow pea tones the spleen, stomach and pancreas; it helps induce urination and relieves damp conditions like leucorrhea.
Ingredients
- 250 grams Red cow peas - Vanpayar
- For seasoning:
- 1/4 tbsp Mustard seeds
- 10 Finely chopped Shallots
- 1/4 cup Fresh grated coconut
- 1 tbsp Red Chilli powder
- 2 Dry Red chilli
- 10 Curry leaves
- 3 tbsp Coconut oil
- Salt to 1/4 cup Fresh grated coconut
- 1 tbsp Red Chilli powder
- 2 Dry Red Chilli
- Salt to taste
Method
Step 1
Soak the Red cow peas / beans (Vanpayar) in water fortnight so that the beans cook well and fast.
Step 2
Cook the beans in water with salt to taste in a pressure cooker.
Step 3
Season by heating oil in a pan and splutter mustard seeds.
Step 4
Then sauté shallots until golden brown and then add dry red chilli.
Step 5
Once the chilli turns dark red add grated coconut and fry for 1 minute.
Step 6
Add red chilli powder and curry leaves and sauté for 1/2 minute.
Step 7
Drain water from the cooked beans and add to the seasoning pan. Mix the beans well with seasoning. Red cow peas / red cow beans coconut-chilli Stir Fry (Vanpayar Thoran) is ready to serve with steamed rice powder recipe called Puttu, variety of breads and steamed rice.
