Roasted jumbo prawns ( നാടൻ കൊഞ്ചു വരട്ടിയത് ) is a spicy side dish. It is very easy to prepare at home within minutes and can be served with hot rice, chapati or roti as a special side dish to the guests and other loved ones.

Consuming prawns is good for the health. It is high in Omega 3 Fatty acid and low in calories. Having shrimps gives a complete protein to the body and a good source for Vitamins B-6, B-12, iron, minerals etc.

Roasted jumbo prawns recipe | നാടൻ കൊഞ്ചു വരട്ടിയത് recipe

Ingredients

  • Big prawns - 4 nos ( deveined and washed )
  • Red chilly powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Coriander powder - 1 tsp
  • Ginger garlic paste - 1 tsp
  • Onion - 2 nos ( sliced )
  • Green chillies - 5 nos ( chopped )
  • Coconut oil - 1/2 cup
  • Tomato - 1 nos ( chopped )
  • Mint leaves - 1/4 cup
  • Coriander leaves - 1/4 cup
  • Salt to taste
  • Curry leaves - 2 string

Method

Step 1

Clean the big prawns and marinate with 1/2 tsp red chilly powder, 1/2 tsp turmeric powder,1/2 tsp coriander powder,1/2 tsp ginger garlic paste and salt. Keep it aside for half an hour.

Step 2

Heat coconut oil in a pan shallow fry the big prawns for 5 minutes.

Step 3

In the same oil sort the sliced onion for 3 minutes. Add ginger garlic paste, green chillies and stir well.

Step 4

Add red chilly powder, turmeric powder, coriander powder, tomato, mint leaves, coriander leaves, curry leaves and mix well.

Step 5

Add fried big prawns, salt and cook in a low flame for 5 minutes. Switch off the flame.

Step 6

Tasty Roasted jumbo prawns is ready.
