Squid Fry Recipe – Koonthal Varuthathu

Squid are cephalopods of the order Teuthida which comprises around 300 species. Squid have differentiated from their ancestral molluses such that the body plan has been condensed antero-posteriorly and extended dorso-ventrally. A cephalopod is any member of the molluscan class Cephalopoda.

These exclusively marine animals are characterized by bilateral body symmetry, a prominent head, and a set of arms or tentacles modified from the primitive molluscan foot. Many species are popular as food in cuisines as diverse as Chinese, Turkish, Greek, English, American etc. The body can be stuffed whole, cut into flat pieces or sliced into rings. Squid is a good food source for Zinc, Manganese etc.

Squid as food are prepared in different ways in different countries. It can be grilled, added to various cooking preparations including pasta, or fried in cooking oil either plain or battered and served with a choice of dips including lemon, ketchup.

Squid can provide the body with 90% of copper. Eating these marine cephalopods may helps stabilize sugar levels with the help of their supply of vitamin B3. Being a good source of potassium, squid helps regulate blood pressure levels. Squid is considered to be one of the more sustainable species of ocean life that currently is not at risk of over fishing. Moreover, squid can serve as a good source of omega-3 fatty acids and a substitute for oily fishes that are at risk of being over fished for a rapidly growing fish market. A healthy recipe for cooking your properly prepared squid is a brief and simple stir fry. It is a very popular recipe in southern states of India.

Ingredients

  • Squid/ Koonthal - 500 grams
  • Ginger garlic paste - 1 tbsp
  • Shallots - 5 chopped
  • Red chilly powder - 1 tbsp
  • Turmeric powder - 1/4 tsp
  • Pepper powder - 1/4 tsp
  • Green chillies - 2 chopped
  • Coconut oil- 1 cup
  • Dry red chilly - 4 crushed
  • Salt to taste
  • Water - 1 cup
  • Curry leaves - 2 string
  • Garam masala powder - 1/4 tsp

Method

Step 1

Clean and cut the squid into small pieces or round shape.

Step 2

Heat 2 tsp coconut oil in a pan add ginger garlic paste, green chillies, turmeric powder, red chilly powder, pepper powder, garam masala powder and saute for 2 minutes.

Step 3

Add squid, water and salt. Cover and cook this for 10 minutes in a medium flame.

Step 4

Add oil in a non stick pan add chopped shallots, crushed dry red chilly, curry leaves and when it turns brown slightly add cooked squid and stir fry until slightly browned.

Step 5

Delicious spicy squid fry is ready to be served.
