Easy Kerala Snack Recipes

Sukhiyan / Sugiyan / ചെറുപയര്‍ സുഹിയൻ is a deep fried tradition snack of Kerala.

The main ingredients of Sukhiyan are green gram (cherupayar), coconut and jaggery.

Do try this quick and easy snack recipe!

Ingredients

  • Cherupayar/Green gram - 2 cup
  • Sharkkara/Jaggery - 1 1/2 cup
  • Grated coconut - 1/2 cup
  • Cardamom powder - 1/4tsp
  • Maida/All purpose flour - 1cup
  • Water - 2 1/2 cup
  • Turmeric powder - 1/4 tsp
  • Salt to taste
  • Coconut oil - 3 cup

Method

Step 1

Soak green gram for 4 hours.

Step 2

Wash thoroughly with water.

Step 3

Pressure cook the green gram with 2 cup water and a pinch of salt for about 10 minutes or 2 whistle.

Step 4

Open the lid of the cooker and cook the green gram till the excess liquid is dried off.

Step 5

Heat a pan and melt the jaggery along with 1/4 cup of water. Strain this with a strainer.

Step 6

Heat the strained jaggery in a pan for 5 minutes and add grated coconut, cardamom powder and mix well.

Step 7

Now add cooked green gram and saute well till the mixture is dry. Remove from the heat and allow to cool. Take small portions of the mixture and make small balls from it.

Step 8

Take a bowl and mix maida, salt, turmeric powder and 1/4 cup of water to make a thick batter.

Step 9

Heat coconut oil in a pan.

Step 10

Dip each ball in the maida batter and deep fry till golden brown.

Step 11

Tasty Sukhiyan / ചെറുപയര്‍ സുഹിയൻ is ready.
