I am sharing a simple and healthy salad recipe with you that you can simply make within 10 minutes. It goes well with lunch and dinner. The seeds add a hit of protein, fiber and omega-3, plus a delicious crunch,  a refreshing salad for a hot summer evening. Try this simple salad recipe!

Health Benefits of Beetroot:
Beetroot is a natural detoxifier and blood purifier. Beetroot is rich in  variety of nutrients that are important for the immune system to work with full efficiency because beets encourage the production of antibodies that fight against the disease or infection inside our body. The white blood cells including leukocytes and phagocytes are responsible to fight against infection and beet helps them by providing nutritional support. Beetroot is also rich in iron and that is why it boosts red blood cells with required iron and facilitates the supply of oxygen towards the cells making our body healthy and young. Beetroot also contains manganese which is really necessary for the formation of interferon that is a potent anticancer substance and beet’s color is red because of the betanin pigment found in beet. This betanin pigment helps to prevent heart disease and cancer by fighting free radicals in our body.  It provides better health and support for  our liver and kidney.

Tomatoes contain a high volume of water, and they are refreshing in salads on hot days. They’re low in calories too, with around 14 kilocalories per 100g – approximately one and a half classic tomatoes, or five to six cherry tomatoes. Tomatoes are the biggest source of dietary lycopene; a powerful antioxidant that, unlike nutrients in most fresh fruits and vegetables, has even greater bioavailability after cooking and processing. Tomatoes also contain other protective mechanisms, such as antithrombotic and anti-inflammatory functions. Consuming tomatoes and reduced risk of cancer, heart disease, and other conditions.

Ingredients

  • Beetroot - 1
  • Tomato - 1
  • Grapes - 10 nos
  • Crumbled cheese - 10 gm
  • Coriander leaves - 2 string
  • Oilve oil - 2 tsp
  • Salt to taste
  • Pepper - a small pinch

Method

Step 1

Peel and wash the beetroot. Cut into circle. Heat a pan add 1 tsp of oilve oil add the beetroot pieces and cook this for 3 minutes.

Step 2

Clean and cut the tomatoes into round shape.

Step 3

Toss the tomatoes and beets with the olive oil, a couple big pinches of salt and a few grinds of black pepper. Taste and add salt and more oil as needed.

Step 4

Put the vegetables in a wide, low serving bowl. Top with the crumbled cheese, grapes and coriander leaves.

Step 5

The delicious tomato beetroot salad is ready .
