Vandakka Varutharachathu Recipe – വറുത്തരച്ച വെണ്ടക്ക കറി – Onam Special Recipe – Kerala Style Vendakka Varutharacha Curry

This vandakka varutharacha curry is my favorite, easy to cook and tasty vegetarian curry which goes very well with kerala parboiled matta rice.

Ingredients

  • Ladies Finger ( വെണ്ടക്ക ) - 250 gms
  • Grated Coconut - 3/4 cup
  • Fennel Seeds ( പെരും ജീരകം ) - 1/4 tbsp
  • Coriander Powder - 2 tbsp
  • Turmeric Powder - 1/4 tbsp
  • Red Chilli Powder - 1/2 tbsp
  • Shallots - 5
  • Ginger - 1/2 inch length
  • Curry leaves - 6
  • Green Chilli - 2
  • Salt to taste
  • For Seasoning
    Oil (Coconut Oil) - 3 tbsp
  • Fenugreek Seeds ( ഉലുവ ) - 2 pinch
  • Mustard Seeds ( കടുക് ) - 3 pinch
  • Dry Whole Chilli - 2 nos
  • Some Curry Leaves

Method

Step 1

Firstly, clean ladies finger & fry it without any oil in a thick bottom pan (nammada cheena chatti 😉 ) until the watery feeling of ladies finger disappear.

Step 2

For gravy: Fry fresh coconut until golden brown. To this add 1/4 tbsp fennel seeds, 2 tbsp coriander powder, 1/4 tbsp turmeric powder, 1/2 tbsp red chilli powder, 5 shallots, 1/2 inch length ginger, 6 curry leaves and stir fry until the masala gets heated.

Step 3

Then switch off the flame and allow it to cool. After that, grind well adding enough water to make a fine paste.

Step 4

Pour this to a clay pot and allow it to boil. You can add enough water as per your requirement. To the boiling gravy, add some chopped shallots, 2 green chilli and salt to taste.

Step 5

After 5 minutes, add fried ladies finger to the gravy and allow it to cook for 2 minutes.

Step 6

In parallel do a seasoning by heating oil (coconut oil) in a pan. Sputter Fenugreek Seeds (uluva), mustard seeds (Kaduku), dry whole chilli & some curry leaves.

Step 7

Add the seasoning on top of curry and mix well. Check salt.

Step 8

If salt is less, add and adjust it, as per your taste... If more .... ayoooo... be careful to add less salt. I felt, this curry tastes better with little less salt!!! Not a joke, actually I felt like that...
