Ingredients

  • Potatoes - boiled and smashed 1 cup
  • Carrots - finely chopped 1 cup
  • Beans - finely chopped 1 cup
  • Cabbages - finely chopped 1 cup
  • Beet root - grated, 1/4 cup
  • Onions - finely chopped 1 cup
  • Ginger & Garlic paste - 1/4 tbsp
  • Nuts - powdered 1/4 cup
  • Gram flour - 1/4 cup
  • Coriander powder - 1 tbsp
  • Chilli powder - 1/4 tbsp
  • Cumin seed powder - 1/4 tbsp
  • Turmeric powder - 3 pinch
  • Salt - to taste
  • Note: I used 2 tbsp Eastern chicken masala instead of adding coriander powder, chilli powder, cuumin seed powder and turmeric powder

Method

Step 1

Stir fry vegetables (finely chopped - important) of your choice in a spoon of oil. Note that this is to remove the moist from the vegetables.

Step 2

Add 1/4 spoon ginger-garlic paste, smashed boiled potato, garam masala, coriander powder, chilli powder, fennel seed powder and turmeric powder (I used Eastern chicken masala instead of adding coriander powder, chilli powder, cumin seed powder and turmeric powder). Mix well

Step 3

Tips for tasty vegetarian sheek kebab:
Tip 1: grind some cashew nuts, raisin and badam n add to vegetables while stir frying.

Step 4

Tip 2: use basan flour (gram flour) as binding agent. Note that you need to heat the flour for 1 minute or so till the nutty flavor comes.

Step 5

Tip 3: Finally add some grated Beet root and very finely chopped coriander leaves. This will add a nice color to your Kebabs.

Step 6

Mix all the above ingredients and shape as kebabs.

Step 7

Tip 4: Refrigerate atleast for 10 minutes before pan grilling. This will make the kebab little tight and kebabs will not break while roll grilling.

Step 8

Roll gilling is done on a flat pan by just rubbing some drops of oil on hot pan and fry kebabs by rolling. This technique is called roll frying.

Step 9

Grill some onions along with kebabs and season the hot kebabs with grilled onions and chopped fresh coriander leaves.

Step 10

Now your tasty vegetarian sheek kebabs are ready to serve.

Step 11

You can make the kebabs and keep in fridge in a tight container for 3 to 4 days and fry as and when required.
