The spices and condiments used in biriyani may include ghee, nutmeg, mace, pepper, cloves, cardamom, cinnamon, bay leaves, coriander, mint leaves, ginger, onions, and garlic. The main ingredient that accompanies the spices is the meat – beef, chicken, goat, lamb, fish or shrimp.
Chicken biriyani may be served with dahi chutney or Raita, korma, curry, boiled egg and salad. Chicken Biryani is very important for festivel occasions in Kerala. Different styles like Kozhikodan Biriyani, Malabar Biriyani, Thalashery style Biriyani, Kayees Biriyani are famous in Central Kerala especially in Cochin. The rice used is basmathi rice.
- Biryani rice - 4 cups
- Chicken - 1 kg ( cut in to pieces )
- Green chilly - 10 nos ( grainded )
- Ginger garlic paste - 3 tbsp
- Onion - 5 nos
- Tomato - 3 nos ( chopped )
- Coriander leaves - 15 gm
- Curry leaves - 2 string
- Lemon -1 nos
- Curd - 1 cup
- Garam masala powder - 1 tbsp
- Ghee - 150 gm
- Cloves - 5
- Cardamom - 5
- Cinnamon - a big piece
- Salt to taste
- Hot Water -8 cups
- Cashew nuts -100 gm
- Raisins - 50 gm
- Cashew nuts paste - 3 tbsp
- Pineapple -2 pieces ( chopped )
- Biriyani essence - 2 drop
Heat a pressure cooker add 2 tsp of ghee .Add chopped onion and stir till it turns light brown colour. Add ginger, garlic paste and grainded green chillies and cook for 5 minutes.
Add chopped tomato and cook for 3 minutes. Add curry leaves and coriander leaves, chicken pieces, salt and curd. Mix well and cook for 8 to 15 minutes. Add cashew nut paste ,garam masala and mix well. Chicken masala is ready.
Wash and drain rice.
Heat a big vessel add 5 tsp of ghee in to it. Add cloves, cardamom, Cinnamon into it. Then add drained rice and fry for 5 minutes. Add hot water, lemon juice, salt. Allow it to boil. When rice is fully cooked add chopped pineapple and mix well and keep it aside.
Take a pan add some ghee and fry cashew nut and raisins.
Layer the baking vessel with alternative layers of rice and chicken masala. Garnish the top of the rice with fried nuts, biriyani essence, and raisins. Keep it in oven under light heat for 15 minutes.
Delicious chicken biriyani is ready.
