Kerala Duck roast is very authentic recipe, a distinctive tradition passed down by generations. A traditional and authentic non-vegetarian dish from Kerala. Delicious and spicy duck curry prepared as side dish for rice, appam, puttu.
Duck meat again is a much loved Syrian Christian food, and is to be found at all special occasions including Wedding, Christmas and Easter feasts. There are different variations in making duck roast. In regions like Kuttanadu, it is made with the skin on and is fried in its own fat and seventy percent of the cooking is done without adding water.
Try this traditional Duck Roast recipe that is so easy to make and delicious to eat!
- Duck -1 kg (cut into pieces)
- Onion - 150 gm
- Kashmiri red chilli powder - 2 tbsp
- Coriander powder - 1 tbsp
- Turmeric powder - 1/2 tsp
- Garam masala - 1/2 tsp
- Shallots - 100 gm
- Tomato - 1 no
- Black Pepper powder - 1 tsp
- Ginger Garlic paste - 2 tbsp
- Coriander leaves - 2 string
- Curry leaves - 2 string
- salt to taste
- water - 2 cups
- Green chillies - 4 nos
Cut the duck into medium sized pieces and wash well with water.
Heat a pressure cooker and add coconut oil. Once oil is hot add the sliced onions and sliced shallots and saute for 4 minutes.
Then add the ginger garlic paste, sliced green chillies, curry leaves to it and saute it well.
Add sliced tomatoes, kashmiri red chilli powder, coriander powder, turmeric powder and garam masala and saute for 2 minutes.
Add the duck to the mixture. Saute again and add water, salt and close the cooker and pressure cook until you hear about 3-4 whistles on high heat.
Open the cooker and add the pepper powder and coriander leaves and stir gently. Lower heat and simmer gently till duck is cooked and gravy has thickened.
Tharavu roast or Duck roast is ready to serve.
