Vegetable Fingers – Kerala Nalumani palaharam നാലുമണി പലഹാരം recipe

Vegetable Fingers are very tasty and easy to make. The vegetables are mixed with smashed potatoes then covered with crispy breadcrumbs before frying in the oil.

Try this easy Nalumani palaharam in your kitchen.

Ingredients

  • Potatoes - 1(boiled and smashed)
  • Carrots - 1 no (grated)
  • Beans - 2 nos (finely chopped)
  • Green peas - 1/2 cup(boiled)
  • Sweet corn - 1/4 cup(boiled)
  • Coriander leaves - 1/4 tsp
  • Pepper powder - 1/4 tsp
  • Cheese - 1 1/2 tsp (grated)
  • Maida - 1 tsp Paneer - 1 tsp(grated)
  • Egg - 1 beaten
  • Salt to taste
  • Vegetable oil - 3 cup
  • Bread crumbs - 1 cup
  • Paneer - 1/4 cup (grated)

Method

Step 1

Take a bowl add boiled and grated potato,carrot,beans,green peas,sweet corn,pepper powder,coriander leaves,salt,1/2 tsp of maida,cheese,paneer,and mix well all the ingredients evenly and prepare a dough. Knead well.

Step 2

Now prepare small balls with dough and cut into small square shapes.

Step 3

Dust the fingers in the maida and dip in beaten egg and coat with bread crumbs.

Step 4

Heat vegetable oil in a pan and deep fry the bread and vegetable fingers to a golden brown colour.

Step 5

Tasty vegetable fingers a nutritious tea-time snack is ready.

Step 6

Serve hot with ketchup.
