Ramadan Iftar Recipes

Aleesa / Alsa / അലീസ is one of the most common Malabar recipe of north Kerala Muslims. It is served during Muslim salkarams, marriages, religious festivals like Eid and other special occasions, as a starter.

Aleesa is a traditional Middle Eastern recipe.This is prepared during the month  of Ramadan in most of the Arab houses & distributed to nearby houses and served during Iftar time.

It is a whipped wheat-meat recipe, prepared by cooking whole husked wheat with coconut milk and seasoned with fried shallots and ghee.The non veg version is ‘Kozhi-aleesa’ or ‘Mutton-aleesa’, where you cook chicken or mutton along with wheat.

Ingredients

  • Wheat – 2 cups
  • Chicken pieces – 400 gms
  • Cloves – 4 nos
  • Onion - 1 (chopped)
  • Cinnamon stick - 1 inch
  • Water - 5 cup
  • Coconut milk - 2 cup
  • Ghee - 4 tsp
  • Garlic - 2 cloves (chopped)
  • Cardamom - 1 no
  • Onion - 1 (thinly sliced)
  • Cashew nuts - 5 nos
  • Raisins - 5 nos
  • Salt to taste

Method

Step 1

Wash and soak the wheat in water for about 4 hrs.

Step 2

Clean and wash the chicken pieces.

Step 3

Drain the wheat and transfer it to a pressure cooker. Add the chicken, chopped onion, cloves, garlic, cardamom, cinnamon stick, water and salt into it.

Step 4

Close the pressure cooker and cook till first whistle comes. Then cook on very low flame for about one hour.

Step 5

Heat ghee in a small pan and fry the finely chopped onion till golden brown and add cashew nuts, raisins and fry for one minute.

Step 6

After an hour, remove the pressure cooker from the heat and wait for the pressure to go down.

Step 7

Then open the lid and pour a little coconut milk and mix well. Place the cooker back on the stove and check the consistency and pour more coconut milk if required.

Step 8

Once the Aleesa has attained the desired consistency, cook till it boils and turn off the flame.

Step 9

Transfer it to a serving bowl and pour the ghee, fried onion, cashew nuts and raisins over it.

Step 10

Yummy & Healthy Aleesa is ready. Enjoy!!!
