Aval Vilayichathu is a favourite dish of Keralities. Aval is also called flattened rice or beaten rice or rice flakes. The flakes of rice swell when added to liquid whether hot or cold as they absorb water, milk, or any other liquid. This rice flakes is also popular across Nepal, India and Bangladesh. Aval or poha is healthy and easily digestible and can beย preparedย as a savory or sweet dish.
Aval vilayichathu is a simple snack made with aval, coconut and jaggery. This is a very delicious snack andย nutritiousย also.
Ingredients
- Aval or Rice flakes - 4 cup
- Grated Coconut - 1 cup
- Jaggery - 2 cup
- Cardamom Powder - 1 tsp
- Sesame seed (Ellu) - 1 tsp
- Ghee - 2 tsp
- Cashew nuts - 3 tsp
- Raisins - 1 tsp
- Water - 1/2 cup
Method
Step 1
Melt jaggery with half cup of water in medium flame and strain it.
Step 2
Heat ghee in a pan and fry cashew nuts and raisins. To the same pan add sesame seed and melted jaggery and cook for 5 minutes. When the melted jaggery becomes thick add grated coconut and stir well for 3 minutes.
Step 3
Add aval and cardamom powder and mix well for 2 minutes till the aval is well coated with the jaggery and coconut. Put off the fire and add fried cashew nut and raisins. The delicious aval vilayichathu is ready to serve.
