Beetroot Kofta Curry Recipe

Beetroot Kofta Curry is a delicious, mouthwatering and healthy recipe. In this curry, grated beetroot stuffed dumplings are cooked in a spicy thick onion-tomato based gravy. The gram flour or besan blended beetroot koftas are fried and simmered in the curry.

Beetroots are an excellent source of folic acid and a very good source of fibre, manganese and potassium.ย Beetroot exerts favourableย effects on bowel function, which may assist in preventing constipation and help to lower cholesterol levels too.

Ingredients

  • For koftas: - Beetroot - 2 nos ( grated )
  • Carrots - 1 no ( grated )
  • Boiled potatoes - 1 no ( mashed )
  • Green chilly - 3 nos ( chopped )
  • Garlic - 3 cloves ( chopped )
  • Besan flour / chick pea flour - 2 tbsp
  • Gram flour - 2 tbsp
  • Coriander leaves - 2 tsp ( chopped )
  • Salt to taste
  • Vegetable oil - 200 ml
  • For gravy: - Tomatoes - 3 nos ( pureed )
  • Onions - 2 nos ( pureed )
  • Ginger - 1 inch piece ( chopped )
  • Green chillies - 2 no ( chopped )
  • Red chilli powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Cumin powder - 1/4 tsp
  • Garam masala powder - 1/4 tsp
  • Fennel powder - 1/4 tsp
  • Fresh cream - 2 tbsp
  • Vegetable oil - 2 tbsp
  • Water - 3 tbsp
  • Salt to taste
  • Coriander leaves - 2 tsp ( chopped )

Method

Step 1

Wash, peel and grate the beetroots and carrots. Keep them aside.

Step 2

Boil or cook the whole potato in a pressure cooker for 3 whistles. Once cool enough to handle, peel and mash the potato well.

Step 3

Heat 3 tsp of vegetable oil in a pan and add grated beetroot and carrot. Saute for 5 minutes on a low flame. Add chopped garlic and chopped green chilly into it and cook for 3 minutes. Switch off the flame.

Step 4

Take a bowl and mix together cooked beetroot, carrot, gram flour, potato, besan flour, coriander leaves and salt.

Step 5

Make a soft dough and divide into small balls.

Step 6

Heat vegetable oil in a pan and fry the balls on a medium flame till golden and crisp. Drain it on absorbent paper. The koftas are ready.

Step 7

Peel and finely chop the onions. Make a puree of onions and tomatoes separately using a mixer grinder.

Step 8

Add 2 tbsp of vegetable oil in a pan and add chopped green chillies, ginger and saute for 3 minutes on a low flame.

Step 9

Then add onion paste into it and keep on mixing till the onions are thoroughly cooked and color changes to brown. Then add red chilly powder, turmeric powder, fennel powder, cumin powder and garam masala powder to it.

Step 10

Saute well for 2 minutes and add pureed tomatoes into it and again mix thoroughly for 5 minutes. Now add salt and water and let it boil for some time till it becomes thick.

Step 11

Add the coriander leaves and fresh cream into it and mix well. Switch off the flame.

Step 12

Transfer this into a serving dish. Arrange the koftas in gravy and top it with finely chopped coriander leaves.

Step 13

Tasty Beetroot Kofta Curry is ready.
