With regards to it’s nutrients, carrots are known to be very rich in beta carotene, Vitamin A, antioxidants, dietary fiber and minerals. Carrot are healthy with carotene, vitamins, minerals. Carrots is great for eyes and skin. Carrot contain lots of fibre content which is beneficial for body.
Dates are an excellent source of readily available energy. Dates are high in several important minerals including potassium, manganese, magnesium and copper.
- All purpose flour (maida) - 1 cup
- Eggs - 2 nos
- Sugar - 3/4 cup
- Grated carrots - 1/2 cup
- Dates - 1/2 cup (chopped)
- Cashew nuts - 1/2 cup (chopped)
- Baking soda - 3/4 tsp
- Salt - a pinch
- Vanilla extract - 1/2 tsp
- Vegetable oil - 3/4 cup
Heat sugar in a dry pan on medium heat till it is nicely caramelized. Add hot water to the caramel and switch off the heat. Caramel is ready.
Preheat an oven to 350˚F/ 180˚C.
Sift flour, baking soda and salt together. Take a bowl and add eggs, sugar and mix well. Add oil to it and beat thoroughly.
Add the prepared caramel, vanilla essence and mix well. Add the flour mixture and mix slowly.
Add a tablespoon of flour into the carrots, dates, nuts and mix slightly. (this will prevent them from sinking to the bottom of the pan). Add this into the batter and mix well.
Take a cake pan apply a thin layer of butter on the pan and sprinkle some maida evenly on top and dust the extra off.
Pour this mixture into the prepared pan, level the top and bake for 35 to 45 minutes. After 45 minutes the cake is ready.
Once the cake is chilled, run a knife along the sides and unmold the cake. Then cut the cake into slices.
Tasty carrot and date cake is ready to be served.
