Cherupayar Ularthiyathu Recipe | Green Gram Stir Fry

Cherupayar Ularthiyathu / Green Gram Stir Fry / Nadan Cherupayar Recipe / ചെറുപയർ ഉലർത്തിയത് is a simple Kerala style dish. It can be served with Boiled Rice or Puttu.

Green gram, also known as mung bean is one of the best vegetarian superfoods that has been praised for its amazing health benefits.

It is a rich source of low fat protein, it has a wide amino acid profile and contains no trans or saturated fats. It has both insoluble and water soluble fibers that help to maintain a healthy appetite. Water soluble fiber helps to lower LDL cholesterol and protects from cardiovascular diseases. Green gram also contains folic acid, magnesium and vitamin B-6.

It digests slowly, gradually releasing sugar into the blood and helps to maintain the blood sugar level. It is said that the water in which green gram was soaked is a good medicine during cholera, measles and chicken pox.

Ingredients

  • Green Gram / Cherupayar – 1 cup
  • Turmeric Powder – 1/4 tbsp
  • Red Chilly Powder – 1/2 tbsp
  • Red Chilly Flakes – 1 tsp
  • Shallots – 5 nos (sliced)
  • Mustard Seeds - 1/4 tsp
  • Water - 1 cup
  • Coconut Oil – 4 tbsp
  • Curry Leaves - few
  • Salt to taste

Method

Step 1

Wash the cherupayar or green gram in water and soak it overnight.

Step 2

Heat a pressure cooker and add green gram, salt, turmeric powder, 1 cup of water and cook for 2 whistles. Switch off the flame and let it cool.

Step 3

Heat coconut oil in a pan and add mustard seeds. When the mustard starts to splutter, add curry leaves, sliced shallots and saute for 3 minutes. Add red chilly flakes, red chilly powder and saute for another 2 minutes.

Step 4

Add cooked green gram to this and cook for 2 minutes. Mix slowly untill green gram is well coated with the shallot and dry chilly mix. Switch off the flame.

Step 5

Tasty Cherupayar Ularthiyathu is ready.
