Chicken and Vegetable Fingers Recipe – Tasty & Simple Snack Recipe
Chicken and Vegetable Fingers is a tasty and easy to make evening snack. Finely chopped fresh vegetables and cooked chicken are mixed and shaped into fingers and deep fried. It is a delicious and simple starter recipe. These fingers make a great snack when your kids get back from school.
Vegetables are an important part of healthy eating and a main source of many nutrients including potassium, fiber, folic acid and vitamins A, E and C. - Chicken pieces - 250 gm
- Carrot - 1 no ( chopped )
- Cabbage - 1/4 piece ( chopped )
- Beans - 5 nos ( chopped )
- Onion - 1 no ( chopped )
- Green chilly - 3 nos ( chopped )
- Red chilly flakes - 1 tsp
- Pepper powder - 1/2 tsp
- Coriander leaves - 2 tbsp
- Maida - 4 tbsp
- Cornflour - 5 tbsp
- Soya sauce - 1 tsp
- Vegetable oil - 250 ml
- Water - 50 ml
- Salt to taste
Clean and wash the chicken. Heat a pressure cooker and add the chicken pieces along with 1/4 teaspoon pepper powder, 50 ml of water and salt. Cook for 2 whistle.
Once the chicken is done, switch off the flame and let it cool. Shred the chicken and keep it aside.
Clean and chop all vegetables.
Take a bowl and add shredded chicken, chopped carrot, green chilly, cabbage, beans, onion, salt, cornflour, maida, red chilly flakes, chopped coriander, pepper powder and soya sauce and mix well. Keep this for 5 minutes.
Divide this mixture into equal portions and roll into balls. Then shape each ball into two-inch long fingers.
Heat vegetable oil in a deep pan.
Deep fry the fingers in hot oil until it turns golden and crisp. Drain on absorbent paper. Serve hot with tomato ketchup.
