Chicken Ghee Roast Recipe is a mouthwatering dish which looks and tastes wonderful. This chicken ghee roast is an excellent side dish for rice varieties.Ā In this recipe the chicken pieces are dry roasted in ghee and spicyĀ masala.

ChickenĀ is aĀ great source of lean and low fat protein. Delicious ghee roast chicken is cooked in ghee and freshly ground spices with curry leaves. Try out this yummy chicken side dish at your home and enjoy.

Ingredients

  • Chicken - 500 gm ( with bone )
  • Kashmiri red chilly - 5 nos
  • Dry red chilly - 5 nos
  • Coriander seeds - 1 tbsp
  • Cumin seeds - 1 tbsp
  • Fennel seeds - 1 tbsp
  • Pepper corns - 1 tbsp
  • Ginger - 1 piece
  • Garlic cloves - 3 nos
  • Lemon juice - 1 tbsp
  • Curd - 3 tsp
  • Onion - 1 no ( finely chopped )
  • Turmeric powder - 1/4 tsp
  • Sugar - 1/4 tsp
  • Ghee - 200 ml
  • Curry Leaves - 2 sprigs
  • Water - 100 ml
  • Salt to taste

Method

Step 1

Cut the chicken into medium size pieces and wash and drain on a colander.

Step 2

Heat a non stick pan and dry roast the chillies, pepper corns, fennel seeds, coriander seeds and cumin seeds on a low flame for 5 minutes.

Step 3

Grind the roasted ingredients along with ginger, garlic, lemon juice and 100 ml of water into a smooth and a thick paste.

Step 4

Add the ground paste, turmeric powder, yogurt and required salt into the chicken pieces and coat it well with the masalas. Allow it to marinate for a minimum of 1 hour.

Step 5

Heat 200 ml of ghee in a wide thick bottomed pan and add chopped onion, a pinch of salt and saute until the onions are translucent.

Step 6

Add the marinated chicken pieces into it and mix well. Add 1/4 tsp of sugar to get a balanced taste. Cover and cook on a low flame for 20 minutes. Stir chicken pieces in between.

Step 7

Finally add some curry leaves to it and turn off the heat.

Step 8

Tasty Chicken Ghee Roast is ready.
