Egg Omelette Curry Recipe / Mutta Poricha Curry / മുട്ട പൊരിച്ച കറി is an exotic dish made with omelette cut into pieces and cooked in a tangy and spicy tomato gravy. It is a very simple and tasty recipe. It is made with egg, tomatoes, ginger, chillies and spices that makes a great side dish with Roti or Rice. It is a delectable side dish which is healthy, nutritious and stomach filling. Egg is one of the most nutritious food in our diet. It is rich in minerals, proteins and vitamins. Eggs are a good source of essential minerals such as Calcium, Iron, Phosphorus, Zinc and Iodine. Eggs are rich in vitamin B, especially vitamin b12, vitamin A, vitamin D, vitamin E and vitamin K. It should be noted that very few food items that contain vitamin D, egg being one of them.

Ingredients

  • Egg - 2 nos
  • Onion - 2 nos ( 1 no chopped and 1 no sliced )
  • Green Chilly - 6 nos ( 3 nos slit and 3 nos chopped )
  • Ginger - 1 small piece ( chopped )
  • Red Chilly Powder - 1/2 tsp
  • Turmeric Powder - 1/4 tsp
  • Coriander Powder - 1 tsp
  • Garam Masala Powder - 1/4 tsp
  • Coconut Milk - 250 ml
  • Water - 200 ml
  • Mustard Seeds - 1/2 tsp
  • Coconut Oil - 5 tbsp
  • Tomato - 1 no ( chopped )
  • Curry Leaves - 2 sprigs
  • Salt to taste

Method

Step 1

Beat eggs in a bowl by adding green chillies, chopped onion ( 1 no ), curry leaves and little salt.

Step 2

Heat 2 tbsp of coconut oil in a pan and pour the beaten egg mixture and cook for 2 minutes. Turn the omellete and cook the other side till golden brown in colour. Keep it aside. Cut it into medium pieces.

Step 3

Heat 3 tbsp of coconut oil in a pan and splutter the mustard seeds. Once crackled, add sliced onion and fry till golden brown on a medium heat.

Step 4

Add chopped ginger, curry leaves and slit green chillies into it and saute for 5 minutes.

Step 5

Add red chilly powder, turmeric powder, coriander powder, chopped tomatoes and garam masala powder into it and mix well. Saute it for 3 minutes or till the raw smell goes.

Step 6

Then add water ( 200 ml ) and salt to it. Cover it with a lid and cook on a low flame for 5 minutes. Pour coconut milk to it and allow to boil for a minute on low flame.

Step 7

Gently add omelette pieces into it and mix well. Cook again on a low heat for 5 minutes or till gravy is well coated on omelette. Switch off the flame.

Step 8

Tasty Egg Omelette Curry is ready.
