Ela Ada Recipe – Vazhayila Ada Recipe – ഇലയട

Ela Ada or Vazhayila Ada is a traditional Kerala snack. It is made of coconut and jaggery which is layered inside the rice paste in banana leaf and steamed in a steamer. It is served as an evening snack or as part of breakfast. Tryout this delicious and simple snack at your home.

Ela ada / Vazhayila Ada is an authentic recipe of Kerala which is so tasty and a must try dish. There are different ways of preparing the outer covering. Some use rice flour, some wheat flour and some others even use maida.

Ingredients

  • Roasted Rice Flour - 1 cup ( 250 gm )
  • Hot Water - 1 1/4 cup
  • Grated Coconut - 1 cup
  • Jaggery - 3/4 cup
  • Cardamom Powder - 1/4 tsp
  • Plantain Leaves - 4 nos
  • Coconut Oil - 1 tsp
  • Salt to taste

Method

Step 1

Heat a pan and melt the jaggery with 1/4 cup of water and strain the jaggery with a strainer.

Step 2

Take a pan and preheat the jaggery. Add grated coconut into it and keep stirring until it turns to thick consistency. Add cardamom powder to it and remove from fire. The filling is ready.

Step 3

Boil 1 cup of water with salt. Pour the boiled water to the rice flour little by little and mix it with a spoon. Keep it aside till it is warm enough to handle.

Step 4

Knead the dough and make it into a soft ball. Make big lemon size balls out of the dough.

Step 5

Clean the vazhayila with water. Grease the leaves lightly with coconut oil.

Step 6

Place big lemon size balls of dough on the leaves and spread it thin using your finger tips.

Step 7

Fill 2 tbsp of coconut jaggery mix above the dough and press softly the whole sides of the ada and fold the vazhayila.

Step 8

Heat an appachembu or a steamer with water to boil on high flame. When the water boils, open the lid and place the banana wraps and steam for 15 minutes on a medium flame.

Step 9

After 15 minutes, switch off the flame. When it is cooled, open the steamer and serve the adas hot or cold.

Step 10

Tasty Ela Ada is ready.
