Vegetables are an integral part of of a healthy diet. Elephant Yam is a good source of nutrients like proteins, omega 3 fatty acid, fiber, vitamin ,B6, carbohydrates and minerals.Elephant Yam is also called Suran in Hindi, Ol in Bengali, Senai kizhangu in Tamil.

The root of the Elephant Yam is efficient in treating Opthalmia. Consumption of this vegetable increases the immunity level of our body. Elephant Yam MezhukkuPuratti is a very tasty dish and it is easy to prepare.

Ingredients

  • Elephant yam (chena) - 250 gm
  • Red chilli flakes - 1/2 tbsp
  • Shallots - 5 nos (chopped)
  • Turmeric powder - 1/4 tsp
  • Salt to taste
  • Coconut oil - 3 tbsp
  • Curry leaves - 2 string
  • Mustard seed - 1/4 tbsp
  • Water - 1 cup

Method

Step 1

Clean and cut the elephant yam in to small pieces.

Step 2

In a cooking pan add elephant yam, 1 cup of water, turmeric powder and salt. Cover and cook this for 10 minutes.

Step 3

Heat coconut oil in a pan and splutter mustard seed.

Step 4

Now add chopped shallots, curry leaves and saute until it turns light brown.

Step 5

Then add red chilly flakes and saute.

Step 6

Now add cooked elephant yam to this and mix everything well and cook for 2 minutes. Tasty elephant yam mezhukkupuratti is ready. Serve hot with rice.
