Vettu Cake or Fried Sweetened Doughย ย is commonly displayed in glass cabinets at most the Chaya kada (tea shops) in rural Kerala. Vettu cake is made with sugar, all purpose flour and eggs.ย They are mildly sweet cardamom flavored cake and it tastes really delicious.
This tea shop snack can be easily made at home with less ingredients and less time. It is a best tea time snack with hot cup of tea or coffee. Your kids will love this snack.

Ingredients
- Maida - 2 1/4 cups
- Eggs - 2 nos
- sugar - 1 cup
- Baking powder - 1/2 tsp
- Salt a pinch
- Cardamom powder - 2 pods (powdered)
- Coconut oil - 3 cups (for deep frying)
Method
Step 1
Sift the flour with baking powder and salt.
Step 2
Take a bowl and beat the egg slightly with the sugar till its creamy. Add the beaten egg and make a smooth dough like for chapathi. The dough should be covered for 40 minutes.
Step 3
After 40 minutes shape the smooth dough into a log shape and then cut them into 2x2.5 inch piece squares. Make a deep cut in the center and again one opposite to the first cut. ( Make a deep "X" mark in the centre).
Step 4
Heat 3 cups of oil in a deep bottomed pan. Fry them in medium heat for 4 minutes flipping them in between to ensure uniform cooking. Make sure that oil is not too hot then outside gets burns earlier and inner dough will not be cooked.
Step 5
Once they are cooked remove from the oil using a slotted spoon and transfer to kitchen towel to remove excess oil.
Step 6
The tasty home made vettu cake is ready. Enjoy with a hot cup of tea.
