Homemade Phirni Recipe | Traditional Indian Rice Pudding Recipe
Phirni is an easy traditional Indian rice pudding. It is a very tasty and delicious dessert that you can serve in any occasions. Phirni is a must in north India on festive occasions or special celebrations. It is enjoyed by all ages.
It is prepared with full cream milk, basmati rice and sugar. Phirni is different from rice kheer as phirni is prepared with grinded basmati rice whereas rice kheer is prepared with whole rice. While making phirni, it is important to grind the rice well. For this you have to soak the basmati rice for atleast 2 hours. Addition of saffron strands gives a nice taste and aroma to the dish. Finally, chill phirni before served.

Ingredients
Rinse basmati rice in running water and soak in water for 2 hours. Drain excess water and transfer rice to the small jar of mixer-grinder. Add 3 tablespoons of water and grind into thick and smooth paste. Heat a heavy bottomed wide pan and boil milk. Take 1 tbsp of warm milk in a bowl and soak saffron and set aside.
Boil milk for 3 minutes in a pan, then add the rice paste. Whisk it well to avoid lumps. Let it cook for 10 minutes in a low flame, stirring constantly. Once rice is cooked, add saffron milk mixture and sugar. Stir well till the sugar is completely dissolved. The mixture should be thicker than pudding consistency. Add cardamom powder and switch off. Spoon the mixture into serving bowls and garnish with chopped pistachios and almonds. Refrigerate it for at least one hour. Tasty Phirni is ready.Method
