Inji Curry – Trivandrum Style Recipe. ഇഞ്ചി കറി is an inevitable part of the Kerala sadya. It is an absolutely delicious and healthy side dish.

Ginger is highly nutritious and it helps in digestion. Ginger contains Gingerol, a substance with powerful medicinal properties.

Ingredients

  • Inji / Ginger - 250 gm (Thinly sliced)
  • Tamarind - 1 lemon size
  • Red Chilly Powder - 1 tbsp
  • Turmeric Powder - 1/4 tsp
  • Coriander Powder - 1 tbsp
  • Fenugreek Powder - 1/4 tsp
  • Mustard Seeds - 1/2 tsp
  • Dried Red Chilly - 3 nos
  • Curry Leaves - 2 sprig
  • Coconut Oil - 5 tsp
  • Hot Water - 1 cup
  • Salt to taste

Method

Step 1

Peel skin, wash and thinly slice the ginger.

Step 2

Soak the tamarind in 1 cup of hot water for 10 minutes. Then squeeze the tamarind to extract the juice. Filter the tamarind juice and keep it aside.

Step 3

Heat 2 teaspoons of coconut oil in a pan and stir fry the ginger until it turns golden brown.

Step 4

Grind the ginger along with chilly powder, coriander powder, turmeric powder and tamarind juice. keep this aside.

Step 5

Heat 3 tbsp coconut oil in pan and splutter mustard seeds followed by curry leaves and dried red chilly.

Step 6

Add the ground ginger mixture into it and bring it to boil. Then add fenugreek powder into it and mix everything well. Switch off the flame.

Step 7

Tasty Trivandrum Style Inji Curry is ready.
