Jalebi is a popular sweet served during special occasions like Diwali, Eid, birthdays, wedding party, etc. it is juicy, crunchy, swirly sweet and it can prepare at home within minutes.

Ingredients
Boil sugar and water in a pan, let it boil till it becomes a thick syrup, when its one thread consistency is ready add lime juice and rose essence (lime juice helps to prevent the sugar from crystallizing). Switch off the heat and keep the syrup aside. Soak urad dal in water for 1 hour. Drain water from the soaked urad dal and transfer to a grinder to grind it to a smooth paste. Add few drops of water to make it grind easier. Grind it to a very smooth paste. This smooth paste makes Jalebi and it depends on how smooth the dal grind. Add food colour to the batter and mix well. In a zip-lock bag, cut its tip to make a small hole and spoon or swirl (ചുറ്റുക ) in the batter.
The hole in the zip lock bag shouldn't be too small nor too big. Heat vegetable oil in a pan , once the oil is very hot, lower the heat and squeeze batter in hot oil in small circular motion starting from outside and ending in the middle. Fry jalebis into crisp, slightly golden brown in colour and immediately add to warm sugar syrup. Soak the jalebi for about 5 minutes and then place on a plate. Yummy Jalebi is ready.Method
