Kaya Achinga Payar Mezhukkupuratti – കായ അച്ചിങ്ങ പയർ മെഴുക്കുപുരട്ടി is a Kerala style stir fry recipe which is very easy to prepare and goes well with Plain Rice. Try out this simple, quick stir fry that would just taste awesome.

Ingredients

  • Achinga Payar (Long Beans) - 1/2 cup (cut into small pieces)
  • Kaya (Raw Banana) - 1/2 cup (cut into small pieces)
  • Turmeric Powder - 1/4 tsp
  • Green Chilly - 2 nos (split into two)
  • Dry Red Chilly - 5 nos (crushed)
  • Shallots - 10 nos (crushed)
  • Water - 1 cup
  • Curry Leaves - 2 strings
  • Coconut Oil - 5 tbsp
  • Salt to taste

Method

Step 1

In a cooking vessel, add achinga payar, kaya, 1 cup of water, salt, turmeric powder and green chilly. Cover it with lid and cook for 10 minutes. Open the lid and if there is excess water uncover it and keep on low flame, so that the water evaporates. Switch off the flame.

Step 2

Now crush shallots and dry chilly together.

Step 3

Heat 5 tbsp of coconut oil in a pan and saute the shallot and dry chilly mix along with curry leaves until the raw smell goes.

Step 4

Now add cooked achinga payar and kaya into this and mix everything well. Cook it for 2 minutes and mix slowly till all the pieces are well coated with the shallot and dry chilly mix. Switch off the flame.

Step 5

Tasty Kaya Achinga Payar Mezhukkupuratti is ready.
