Kerala beef fry or beef ularthiyathu is a favourite dish on all occasions in Kerala, India. It is a perfect combination to eat with Kerala red rice ( Matta rice or Parboiled rice ) , Kerala paratha, appam, puttu, chapati etc. Beef fry is also an authentic combination with Kappa (Tapioca) cooked with grated coconut.
There are many different ways in which the beef fry can be made. I am explaining here a typical Kottayam style spicy Kerala beef fry with coconut slices.
As you might have noticed in my other recipes the steps are less, ingredients are commonly available in everyone’s kitchen and cooking method is very simple.

Ingredients
- Indian beef cut into thin cubes - 1/2 kg
- Ginger paste - 1/2 tbsp
- Garlic paste - 1/2 tbsp
- Shallots paste - 5 tbsp (need not be very fine paste)
- Pepper powder - 1 tbsp
- Kashmiri chilli powder - 1/2 tbsp
- Turmeric powder - 1/4 tbsp
- Coriander powder - 3 tbsp
- Fennel seed powder - 1/4 tbsp
- Chilli flakes - 1/4 tbsp
- Vinegar - 2 tbsp
- Curry leaves - 10 nos
- Water - 1/4 cup
- Salt to taste
- Coconut slices - 1/4 cup
- For Frying:- Coconut oil - 6 tbsp
- For garnishing:- Curry leaves - 10 nos
- Green chilli - 5 nos
- Black pepper powder - 1/4 tbsp
Method
Step 1
Clean the beef and mix all ingredients together in a pressure cooker.
Step 2
Cook until 3 to 4 whistles are done. Then reduce the flame & cook for 5 minutes in a low flame. Switch off the flame & allow the cooker to cool for 10 minutes.
Step 3
Heat a thick bottomed pan or traditional Uruli (Traditional cookware in Kerala which is circular in shape & made of heavy bell metal).
Step 4
To the pan add the coconut oil followed by cooked beef (add full gravy). Increase the flame & evaporate excess water.
Step 5
Then in medium flame, fry the beef until the color changes to dark brown or black by occasionally stirring the beef.
Step 6
Before 2 minute switch of the flame for garnishing. So add curry leaves, green chilli (whole) & pepper powder to the spicy Kerala beef fry / beef ularthiyathu. Mix well.
Step 7
The recipe is ready to serve hot! Ummmm yummyyy... Ummmm spicyyyy toooo....
