Tomatoes are slightly fried first. Then we add coconut paste and curd. Coconut paste along with curd gives a wonderful aroma and flavor to the dish. As it needs a very few ingredients and time, you can prepare it very fast. Pachadi can be also made with cucumber, pineapple, mangoes, grapes etc.

Ingredients
Clean and cut the tomatoes into small cubes. In a mixer grinder, grind coconut with 1/2 tsp of mustard seeds and green chilly. Heat 2 tbsp of coconut oil in a pan and add chopped tomatoes. Saute for 3 minutes. Add coconut paste, curd and salt to the tomatoes and mix well. Switch off the flame. Heat a pan and pour 2 tbsp of coconut oil and add 1/2 tsp of mustard seeds. When mustard seeds start to splutter, add dry red chilly and curry leaves. Pour this over the tomato pachadi. Tasty Tomato Pachadi is ready.Method
