Kerala Style Tomato Roast Recipe

Kerala Style Tomato Roast is famous in Kerala and it is easy to cook and very delicious. It is an easy recipe and requires very few ingredients to prepare. It goes well with steamed rice and dosa.

Tomatoes are the major dietary source of the antioxidant Lycopene, which has been linked to many health benefits, including reduced risk of Heart Disease and Cancer. They are also a great source of vitamin C, Potassium, Folate and Vitamin K. They are usually red when mature, but can come in a variety of colors including yellow, orange, green and purple. Tomatoes are a good source of fiber, providing about 1.5 grams per average sized tomato.

Ingredients

  • Tomato - 4 nos
  • Onion - 3 nos
  • Green chilly - 4 nos
  • Red chilly powder - 1/4 tsp
  • Kashmiri chilly powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Curry leaves - 4 strings
  • Coconut oil - 3 tbsp
  • Salt to taste

Method

Step 1

Clean and cut the tomatoes into small pieces.

Step 2

Clean and slice the onion. Chop green chilly into small pieces.

Step 3

Heat coconut oil in a pan and add curry leaves,

Step 4

Add sliced onion into it and saute till the onion are translucent.

Step 5

Add chopped green chilly and saute well for 3 minutes.

Step 6

Add red chilly powder, kashmiri chilly powder, turmeric powder and saute till the raw smell goes.

Step 7

Add chopped tomato, salt and stir well. Close the pan with a lid and cook for 10 minutes on a low flame,

Step 8

After 10 minutes, switch off the flame.

Step 9

Tasty Kerala Style Tomato Roast is ready.
